Custom connector not storing the last date on records for incremental sync as expected

Hi there folks, sorry to bother you but I’m really not being able to identify whats is happening.
I’m making a custom connector on the user interface, when making an incremental sync, on the docs, Airbyte states that it will store the last date present on records on the state.
However it is always storing the current date instead <@U04SE163WC8>
