Performing basic normalization with BigQuery in Airbyte

Hey,
Is it somehow still possible that Airbyte performs the basic normalization for us with BigQuery? Before the Destinations V2 version, everything was placed in individual fields as needed. If not, is it possible to recreate this functionality via dbt (template preferred)?
